The region is renowned for two prominent truffle varieties: the black truffle, also known as the Norcia or Spoleto truffle, maturing from November to March, and the white truffle, predominantly cultivated in the upper Tiber Valley. This culinary program is focused on the black truffle and offers a delightful itinerary, encompassing an afternoon tour in Spoleto there land of the black truffle, an immersive truffle hunting experience, and a wine tour to identify the perfect wine pairings for truffle-infused dishes.
During your cookery holiday in Italy, you will stay on a beautiful, spacious, working farm in the heart of Umbria - a region famous for its green countryside, cuisine and medieval towns. The farm is home to your host, Rafaella, her husband, and many pets. Rafaella has a great passion for her home region of Umbria, its people, food and culture. Your Italian cooking classes will take place within her traditional kitchen, using the freshest products from the local surroundings and producers.
'La volpe e l'uva' (The Fox and The Grapes) farm is a little corner of paradise - a quiet, peaceful oasis, an ideal place to relax and unwind surrounded by the Umbrian hills, valleys and medieval villages. The property consists of 10 hectares of olive groves, vineyards and orchards.
Five lovely, two-room apartments (named Rocco, Riding, Fico, Oca and Paulownia) have been renovated paying close attention to detail. The apartments are sunny and comfortable so that guests, even those who stay for a few days, feel welcomed.
In your free time you can hike, try the local wineries, or jump in the car for a day trip to one of several surrounding medieval cities. Or, perhaps, for something more leisurely, you can unwind by the swimming pool, in the gardens under the shade of the fruit trees, or in the bright communal garden.

Afternoon: it is a wine tour in a winery that produces Sagrantino di Montefalco DOCGS. You will have a guided tour of the vineyard, and cellars finishing up with a test of local Umbrian specialties and wines. You will also visit the medieval cities of Bevagna and Montefalco.

After she decided to give up her job in scientific research, Raffaella Bucefalo, PhD in Micropalaeontology, rediscovered, reclaimed, and developed her three great passions: cooking, connecting, and creating. Since 2005, she has run courses teaching traditional Italian cookery at her agriturismo in Umbria. In 2020, Raffaella published her first cook book "Sprinkle with Flour": a journey into the world of fresh pasta, the food that symbolizes Italian culinary culture. In the book, the description of 19 pasta shapes illustrated with handmade drawings and 22 traditional recipes with photo.
The farmhouse "La Volpe e l'Uva" is located in central Italy, Umbria, north of Perugia, in a hilly position, very near to the main Umbrian towns and near to the Tuscany. It is only 4 kilometers from the historic center of Perugia and it offers a suggestive view of the Umbrian hills. The proximity of Perugia makes the farm's position ideal for visiting other artistic towns in Umbria, such as Assisi, Gubbio, Todi, Orvieto, the Trasimeno Lake, and towns in Tuscany like Siena, Arezzo, and Cortona.
During your stay at the farm, make sure to enjoy your breakfasts; in your apartment you will find coffee, milk, biscuits, jams, butter, and sugar.
The three hands-on cooking classes will result in four-course meals that you will enjoy accompanied by Umbrian wines from the farm; liquors will be served after dinner/lunch.
You will also enjoy one guided tour of a local vineyard and cellar, ending with a tasting of local Umbrian specialties and wines.
Enjoy the truffle hunting and tasting: get familiar with their flavor in order to better face the Nero di Norcia festival that you will participate in on the third day of your trip.
There, you will find stands selling black truffles and a lot of gastronomic events and demonstrations that are held throughout the fair including guided tastings of wines, salamis, and cheeses. During these cooking classes, you will learn how to use traditional Italian ingredients and how to combine them to make delicious recipes. You will prepare a four-course meal: starter, first course, main course, and dessert.
Cook in Umbria will teach you to cook authentic Italian and Mediterranean dishes in an informal and friendly environment, where people learn the passion of the Italian kitchen and have fun doing it. In the cooking classes all pasta, pizza, gnocchi are homemade. Recipes vary according to the seasons, utilizing only the freshest and quality ingredients available. The farm Cook in Umbria produces vegetables, fruits, eggs, jams, wine and extra-virgin olive oil: the same local ingredients that are used to prepare the food during the cooking lessons.
