You will cook the traditional dishes of Tuscany, Umbria, and Lazio together; vegetarians or vegans can be accommodated. The courses will be rich in flavor and taste and are very genuine, mostly using produce and herbs harvested from the garden. Lessons will be based on authentic cuisine taught to by moms and grandmothers. The recipes will be seasonal, because this area offers excellent culinary products. To start, Chef Francesco will present the raw ingredients that you will use then show you different techniques for hand-making noodles, pies, dumplings, stuffed pasta, and pizza. You'll learn techniques for sauces, roasting, and different types of cooking. Then, you'll all sit together at a table and celebrate your preparations with a wonderful five-course dinner immersed in nature.

La Damabianca
Located on the first floor of the villa, the room is the most elegant with luxury finishes. It is accessed from the Salone del Gran Camino. Possibility of additional single bed for a child of up to 10 years (supplement of 15 EUR). The bathroom has a Devon & Devon copper tub with a hand shower.
Particular mention should be made for the Salone del Grande Camino, equipped with large sofas and armchairs, for its view of the Borgo di San Casciano, the swimming pool of the villa set in the greenery, and the garden. You can request, together with the Il Baronerosso room, the use of the exclusive lounge (with supplement), perfect for two couples of friends or families with older children. Pets are allowed.

The manor house opens and turns into a laboratory where a pan of water and flour becomes tagliatelle, ravioli, fettuccine, and the scent of seasoning sauces are a promise. Francesco Falciani
Born in Rome, capital rich in sour colors and delicate perfumes, Francesco's great passion for cooking led him to search for new horizons in the culinary field. In Siena, he has specialized over the years in the Tuscan and Umbrian regional cuisine, collaborating in various restaurants and taverns. He got training in abroad working for a year in Austria and Switzerland. Back in Italy, he perfects himself by joining the F.I.C. In collaboration with an agriturismo in Umbria, he teaches the emerging chefs of Russia the traditional Tuscan dishes and promotes typical Sienese products.
Location
You will be in the kitchen at the province of Siena in San Casciano dei Bagni, it is located in the Val d'Orcia, a UNESCO World Heritage Site, in the Villa Vetrichina complex, surrounded by nature and woods near Monte Amiata, between Tuscany, Umbria, and Lazio. The place is enchanting and magical where you can find a moment of pleasure.
Villa Vetrichina was born as a country farm at the end of the 1700s. Over the years, it has undergone several adjustments but it is in 2012 that it became the subject of careful renovation according to the most modern comforts and designers. The use of natural materials, of Tuscan origin, guarantee the housing quality. Surrounded by unspoiled nature, it is a short distance from the village of San Casciano dei Bagni, considered the most enchanting village in the Val D'Orcia.

With the preparation of the cooking class, meals will be carried out in complete calmness, and once relaxation is finished in the lounge.

After a day at the spa or around the beauty of these places in the evening, the restaurant becomes the right place to relax. Chef Francesco agrees on the menu with the guests, guiding them in tastings of local specialties in a welcoming and informal atmosphere by the warmth of the fireplace.
The restaurant's typical menu includes various appetizers ranging from cutting boards to assorted croutons or to the chef's imagination. The first courses are fresh handmade pasta with typical local condiments: ragù of Chianina or game or fresh vegetables.
Local meats, game, Chianina fillet, parmesan, burrata, etc. enrich the main course menu with sautéed or fresh vegetables; the desserts are obviously homemade. Vegan, allergy, gluten-free, and vegetarian menus are also available on reservation. Always present is the trio of homemade first courses with typical local condiments
